Yamato is an award-winning, fine-dining Japanese restaurant situated in Tollcross in Edinburgh. It serves a range of authentic dishes including A5 Wagyu beef, tempura and sushi; it is the only Japanese restaurant in the city to serve sea urchin when in season.

The kitchen is overseen by chef owner, Max Wang who is originally from Taiwan and fell in love with Japanese food when he was growing up. In 2005, he flew to California to learn the art of making sushi at the Sushi Chef Institute under the mentorship of chef Andy Mastuda. Hailing from a family of successful restaurateurs, Max worked for the family empire for many years before he took the plunge and opened Yamato in 2018. Max is an expert in Nigri and sashimi, he prides himself on bringing the true flavours of Japan to Edinburgh.
